How does BCC-3™ beef classification system work?


The BCC-3™ system works by scanning the beef carcass with a 3D imaging technology, which captures data on the size, shape, and fat content of the carcass. It uses advanced multi-view stereo imaging to create a full 3D reconstruction of each half beef carcass. This data is then analyzed by an AI algorithm, which uses machine learning to identify patterns and predict the quality of the beef based on the EUROP grading system and similar standards.


The BCC-3™ grading system also enables prediction of primal and commercial cut weights. The yield information permits the slaughterhouse to optimize their product sorting and pay the farmers according to the true market value.

No need for carcass orientation:


The beef carcass can be placed in any position, and the beef classification system can still accurately grade it. Some beef grading systems require the carcass to be positioned in a specific way to get an accurate grading result, but the BCC-3™ system is designed to be flexible and can accommodate carcasses in any orientation. This makes the process more efficient.


100% automatic beef classification:


The BCC-3™ is fully automatic, meaning there is no human intervention in the grading process. Once the beef carcass is placed in the system, the technology takes over, and the grading process is completed automatically. This eliminates the possibility of human interference, such as subjectivity or error, and ensures that the grading results are consistent and accurate every time.


No risk of cross-contamination:


The BCC-3™ uses non-contact grading technology, meaning there is no physical contact between the system and the beef carcass. This eliminates the risk of cross-contamination and ensures that the beef is safe for consumption.


No moving parts and low maintenance costs:


The BCC-3™ beef classification system does not have any mechanical components that move during the grading process. Grades both carcass halves:


The BCC-3™ can grade both halves of the beef carcass simultaneously. Yield management with our beef classification system


The BCC-3™ is unique in the world in its ability to accurately predict the characteristics of a beef carcass prior to any processing steps. This allows for better control of the yield management process, which involves managing the supply and demand of the different cuts of meat produced from the carcass.


With exceptional precision, BCC-3™ can define each primal cut and commercial cuts of a beef carcass, thereby enabling accurate yield management control of cut-floor performance. With a factory calibration it is possible to monitor changes and/or improvements in the yield.


 


Custom beef classification system


Frontmatec offers custom calibrations and modelling. This service involves developing customer-specific models for predicting the weight of primals or various commercial cuts in a slaughterhouse.


To create these custom models, Frontmatec offers to plan and execute a factory cut-test, which is a process of analyzing different cuts of meat produced by the slaughterhouse to determine their weight and characteristics. This ensures that the modeling is based on cuts that are reproducible and can be consistently produced by the slaughterhouse.


Once the factory cut-test is completed, experienced meat scientists use state-of-the-art chemometric modeling techniques to develop prediction models that can be implemented in the BCC-3™ system. These models allow for accurate predictions of the weight of different cuts of meat, which is essential for yield management and optimizing profitability in the slaughterhouse.
